This pomegranate pistachio oatmeal bake is SUPER easy to make beforehand; so you can enjoy a relaxing Christmas morning with your loved ones.

Pomegranate Pistachio Oatmeal Bake🎄


• 2 1/4c old fashioned rolled oats
• 1 tsp baking powder
• 1 tsp cinnamon
• 1/4 tsp nutmeg

• 1/4 tsp salt
• 2 mashed ripe bananas
• 3/4c milk
• 1/8c 100% pure maple syrup
• 1 egg
• 1 1/4 tsp vanilla extract
• 1/2c pistachios
• 1/2c pomegranate seeds


Preheat oven to 350°F. Spray an 8-inch square baking pan well with non-stick cooking spray and set aside. In a large mixing bowl, mix together the old fashioned rolled oats, baking powder, cinnamon, nutmeg and salt. Set aside.

In a separate mixing bowl, mix together the mashed bananas, milk, maple syrup, egg, and vanilla extract until fully combined. Add the wet ingredients to the dry ingredients and mix until everything is well incorporated. Gently fold in the pistachios and pomegranate seeds. Pour the mixture into the baking pan and smooth it out.

Bake at 350°F for 35-40 minutes. Remove from the oven and allow to cool for 10-15 minutes. Serve with cinnamon sprinkled plain greek yogurt, pistachios and pomegranate seeds!
