Whip It With Z: First Day Of Summer Peanut Butter Cookie Nice Cream Sandwiches by Guest Chef Brianna Meurer

What's lit Creatives?! It's the first day of Summer, it's WCW Wednesdays, and it's beautiful out! We have something tasty for you to whip up in celebration of the first day of summer! As always, thanks to our lady chef Brianna for sharing this tasty treat sure to keep you cool and drooling all summer 18!

Nice Cream Ingredients:

-4 frozen bananas

-2 dates
-1 tsp. vanilla extract
-dash of cinnamon
*Optional: Cacao nibs or dark chocolate chips

Peanut Butter Cookie Ingredients:
-1 cup almond flour
-1/4 cup oat flour
-1 tsp baking soda
-1 tsp cinnamon
-1/4 tsp sea salt
-1 egg
-1/2 cup creamy peanut butter
-1/4 cup oat milk or almond milk
-3 tbsp coconut oil
-1/3 cup coconut sugar
-1 tsp honey
-1 tsp vanilla extract


Directions:
Place all frozen bananas, dates and vanilla extract in a food processor. and process until smooth. Pour nice cream into a cupcake pan until halfway full. If you wish, stir a few cacao nibs or dark chocolate chips into each nice cream cup. Place pan in the freezer for an hour or so. 

Meanwhile, preheat the oven to 350 degrees. Mix all dry ingredients in a bowl. In a separate larger bowl, mix the remaining seven wet ingredients. Slowly stir the dry ingredients into the peanut butter mixture. Stir until fully combined. Wet your hands and roll the dough into 1 inch size balls. Place on a cookie sheet and pat down with a fork or your hand. Place in the oven for  about 11-12 minutes. Allow the cookies to fully cool and the ice cream to harden. After a serious test of your willpower, it's time to assemble! Have some fun with it and sprinkle some extra cacao nibs or dark chocolate on the outside of your cookie sandwich. Now you're ready to kickoff summer!
